Pancakes

Ingredients:

2 eggs
1 1/4 cups buttermilk
2 tbsp. vegetable oil
1 1/4 cups flour
1 tbsp. sugar
1 tsp. baking powder
1/2 tsp. soda
1/2 tsp. salt

Mix together eggs, milk, and oil.  Add flour, sugar, baking powder, soda, and salt.  Mix until the flour is moistened.  Heat a frying pan on medium high heat.  Grease the pan if necessary.  Pour batter into frying pan to form circles, approximately 3"-4" in diameter.  Turn pancakes as soon as they are puffed and full of bubbles.  Cook until brown.  Serve with your favorite topping.

For us, pancakes aren't just for breakfast.  Omit the sugar and add some ham and cheese for a tasty supper.
